2 cups chopped dark chocolate
1/3 cup peanut butter, natural unsweetened (*see note about powdered sugar)
2 tbsp honey
1/4 tsp cinnamon (optional)
Line cupcake tin with cupcake liners. Or use mini silicone moulds. In a small bowl, mix peanut butter and honey until well combined. Set aside.
In a microwave safe bowl, melt chopped dark chocolate in the microwave in 1 minute increments until melted. If you are melting over stove top, add 1 tsp of coconut oil.
Add about 1 tsp of chocolate to the bottom of each cupcake liner, use the back of the spoon to make sure the bottom in coated with chocolate.
Take about 1/2 tsp of the peanut butter mixture and shape it into a small disc shape (it doesn't have to be perfect). Place the peanut butter disc into cupcake liner and repeat.
Add another 1 tsp or so of melted chocolate on top of each and smooth out with the back of a spoon if necessary. Place in the fridge for about an hour to set. But if you want to add sprinkles leave them in the fridge for about 1 min, then top with sprinkles and return for remaining time.
This recipe will yield more peanut butter cups than can fit in a standard pan. Instead of waiting the full hour to resume, simply remove the cups from the pan after about 10 minutes and transfer to a plate or tray so you can continue making the remaining peanut butter cups.
Decorate with your favourite toppings, freeze-dried berries, flaky sea salt or pistachio crumbles.
To make the rice, heat a 10-12 inch sided skillet over medium heat. Add the coconut oil and orzo pasta. Allow the pasta to get slightly golden and toasted, about 2 minutes. Add the rice and toast the rice another 2 minutes. Add the ginger and cook 30 seconds longer or until the ginger is fragrant. Slowly pour in the vegetable stock and bring the mixture to a boil. Once boiling, cover and reduce the heat to a simmer. Simmer for 20-25 minutes.
Meanwhile, make the chicken mix. Add the diced vegetarian chicken to a bowl and toss with the flour to coat.
Heat a large wok or skillet over high heat. Add 1 tablespoon sesame oil and sear the chicken in batches until browned on all sides, about 3-4 minutes per batch. Remove the chicken to a plate and carefully wipe the hot skillet or wok clean.
In a glass measuring cup or bowl, whisk together the toasted sesame oil, pomegranate juice, soy sauce, rice vinegar, Manuka Honey, garlic and chili paste.
Heat the wok on high heat and add the remaining 1 tablespoon sesame oil. Add the broccoli and mushrooms, cook for 3-5 minutes or until just lightly charred. Reduce the heat to low and slowly pour in the pomegranate/soy mixture. Slide the chicken back in and bring the sauce to a bubble. Simmer for 5-10 minutes or until the sauce thickens and coats the chicken. Remove from the heat and toss with 3 tablespoons sesame seeds.
Divide the rice among plates or bowls. Top with chicken + veggies and then sprinkle with sesame seeds and pomegranate arils.

Heat 1 tablespoon of olive oil on medium heat in a large, high-sided skillet.
Add sliced sausage and cook on medium heat for about 4 minutes on one side, without turning, to get the sausage slices browned. Flip over to the other side and cook for 2 more minutes.
To the same skillet with sausage, add uncooked potato gnocchi, heavy cream, and chicken stock. Bring to a boil on medium heat and stir everything well. Cover with lid, and allow the gnocchi to cook for about 5 minutes on medium heat, while the sauce boils.
To the same pan with gnocchi and sausage, add butternut squash puree, and minced garlic. Bring the sauce to a boil on medium heat, reduce to low-medium heat, stir everything well. Before you begin this Filo Pastry recipe, take your packet of Filo Pastry out of the fridge, still in its plastic bag and allow it to come up to room temperature. Preheat your oven to 180 degrees Celsius, fan forced. Brush a 24cm by 34cm rectangular baking pan with butter.
Combine the eggs, cream, salt and pepper in a mixing jug and whisk until well combined. Set aside.
Lay two sheets of Filo pastry onto your workspace, one on top of the other, with the short sides of the Fillo Pastry facing you. Using your fingers, fold the pastry in a concertina design. Transfer the folded Fillo Pastry to your baking tray. Repeat with remaining Fillo Pastry, until your tray is full. Drizzle the melted butter over the tray using a Pastry brush.
Slot the sliced brie and figs into the Pastry layers. Sprinkle with thyme. Pour the cream and egg mixture over the Pastry.
Bake in the oven for 35 minutes, or until golden. Remove from the oven and serve immediately.

1 tsp cinnamon
¼ cup butter
For the Apple Cinnamon Filling
3 small apples
100 ml water
1 tbsp Steens Manuka Honey
1 tsp cornstarch
1 tsp cinnamon
A pinch of vanilla
A squeeze of lemon juice (optional)
Peel, core and chop the apples into small chunks.
In a pot or saucepan, mix water, cornstarch, honey (MGO 50+), cinnamon, and lemon juice. Bring to a boil, stirring constantly, until thickens up.
Add apples, toss to coat and set aside.
For the Toast Roll-Ups Preheat your oven to 350˚F (180˚C). Cut off the crusts from each slice of your bread. Then flatten using a rolling pin.
Spread about 1-2 tablespoons of the apple pie filling on the flatten toast slices and roll them up into a wrap.
Combine Steens Manuka Honey and cinnamon in a flat bowl (or deep plate). Melt butter and pour in another flat bowl. Brush or dip each toast roll-up into melted butter and then baste with the cinnamon honey mix – warm the mixture if required to a spreadable consistency.
Place them on a baking sheet lined with parchment paper and bake for about 15-20 minutes until crispy and golden browned.

INGREDIENTS
2 tsp Matcha powder
2 scoops vanilla ice cream
90 ml water (hot)
Drizzle of Manuka honey
Add matcha powder to a small bowl. Pour the hot water into the bowl and wisk at the same time. To get a nice and frothy matcha, mix back and forth rather than in circles.
Scoop the vanilla ice cream into serving glasses. Pour matcha over the ice cream.
Top with a drizzle of Manuka honey.
Serve immediately and enjoy! x
1 cup (227g) unsalted butter
1 3/4 cups (373g) manuka honey
1 large egg
2/3 cup (160g) Steens signature pumpkin spice paste
2 teaspoons vanilla extract
2 3/4 cups (330g) all-purpose flour
1 teaspoon baking soda
3/4 teaspoon kosher salt
2 cups (340g) white chocolate chips (optional)
1 cup chopped toasted pecans
Preheat the oven and grease the pan:
Arrange a rack in the center of the oven and preheat to 350°F. Grease a 9x13-inch baking pan liberally with butter. Dust the pan lightly with flour and tap out the excess.
Brown the butter:
Melt the butter in a small saucepan over medium heat. The butter will begin to bubble as the water in the butter begins to boil. Soon after it will stop sputtering, meaning the water in the butter has evaporated. Continue cooking until the milk solids begin to turn golden and the butter smells nutty. Take off the heat and set it aside to cool slightly.
Combine the dry ingredients:
While the butter cools, combine the dry ingredients. In a medium mixing bowl, add the flour, baking soda, and salt. Whisk to combine.
Mix the wet ingredients:
When the butter has cooled slightly, pour it into a large mixing bowl. It’s okay if the butter is still warm, but make sure it’s not so hot that it will cook the egg. Add the manuka honey, egg, Steens pumpkin spice paste, and vanilla extract. Whisk until fully combined and smooth.
Make the batter:
Fold the dry ingredients into the wet ingredients with a wide rubber spatula until just incorporated. Add the white chocolate chips and chopped pecans and stir to distribute evenly.
Bake:
Transfer the batter to the prepared baking pan and spread evenly. Bake for 35 minutes, or until a toothpick inserted in the center comes out with just a few moist crumbs attached.
Cool and serve:
Allow to cool completely in the pan. Slice into squares and serve.
Store leftovers in an airtight container at room temperature for up to 1 week or freeze for up to 2 months.

INGREDIENTS
Pour the cream and milk into the blender container with the Manuka Honey. Then add the lemon juice.
Blend for about 20 to 30 seconds then add the grated lemon zest. Blend again for a few seconds.
Pour into a metal pan and place in the freezer for about an hour.
Remove from the freezer and stir with a spoon. Repeat this two more times (twice in two hours.) You will see the mixture begin to take on the texture of ice cream. When it's ready, scoop into bowls, cups, or cones to serve.

8:00am | I like to get some steps in before I start my day so I usually get this done in the morning before I start scheduling my day and start on whatever work I need to complete. My work is very variable which I love, some days I have cafe shifts and other days I have content to film or marketing projects to work on so it changes up a lot!
12:30pm | a break from content creating to have some lunch. This day I made turkish eggs topped with pomegranate, coriander & a side of tiger bread to soak up all of the goodness.
4:00pm | I got ready for the gym and headed out for an upper body session.
5:30pm | Back from the gym! and time for a nourishing snack before dinner. I made a super green smoothie, naturally sweetened with squeezy manuka honey. Packed with fibre, probiotics and antioxidants. I love to add vegetables to my smoothies so it's not a massive sugar rush, as well as adding kefir to support my gut health
7:00pm | Time for dinner. I made some quick and easy fish tacos with baby jem, pickled red onion & tartare sauce. This is definitely an English take on a Mexican classic, but super delicious all the same & so easy to prepare.
7:30pm | Wind down time. A hot bubble bath & time to relax down for the night.

A healthy dinner is being prepared just before my husband gets home. Once ready, we all sit together and enjoy our meal and go over our day. After dinner, we like to take an evening stroll around the neighbourhood to get some steps and fresh air. Alternatively, when we aren't too tired, we would take a short drive to the nearest park and let our little one run around and enjoy the swings.

It's wind down time and we get our toddler ready for bed starting with a nice warm bath. We get her into cozy pjs and let her pick out her favourite books to read. Sometimes it ends up being 4 books! The sleepy dust finally takes over and we take her to bed. My husband and I finally get some time to ourselves. We usually end the nightcap will sometimes be some warm milk and Manuka honey. Bring water to a boil; place tea bags into a large pitcher or bowl. Pour boiling water carefully over tea bags; steep, covered, for 5 minutes. Discard tea bags.
Stir in honey once tea has cooled down to around 30C and keep stirring until dissolved. Pour pineapple juice into tea and honey mix.
Pour granita mixture into an 8-by-8-inch metal pan. Cover and place pan in freezer for 1 hour. Remove pan from freezer and scrape mixture with a fork, crushing any lumps. Freeze an additional 20 minutes; remove and scrape. Repeat every 20 minutes until mixture looks like fluffy crushed ice.
Spoon into small glasses and serve with a couple of slices of fresh pineapple, a spiral or wedge of lime and some fresh edible flowers.

Pannacotta
1/4 cup whole milk (180 ml)
2 cups heavy cream (480 ml)
1/4 cup raw manuka honey (50 gr)
1 ¼ tsp gelatin powder
1/2 tsp vanilla extract
3x Kazi Yetu coco choco teabags
Honey Chocolate Jelly
1 can (370ml) evaporated milk
½ cup cocoa powder
1 cup honey
2 cups of water
1 teaspoon gelatin
In a medium saucepan, heat milk, heavy cream, and honey until lightly simmering (do not boil). Remove from the heat.
Add Gelatin powder to the pan, stirring constantly until dissolved.
Add vanilla extract and 3x tea bags. Allow the mixture to steep for 10-15 minutes.
Pour evenly among the prepared molds. Refrigerate until set for at an hour.
Honey Chocolate Jelly
Pour 2 cups of water (room temperature) into a small pot. Sprinkle 1 teaspoon of gelatin and stir until dissolved. Bring to a boil. Add milk, honey, and cocoa powder and stir until dissolved.
Pour in a thin layer (approx. 3mm / 0.10 in) over the Choco coco pannacotta and leave to set for at least 2-4 hours.
To serve, top with toasted coconut flakes.
