Honey Tequila Cocktails with Fig Skewers

Summer is coming… The days are getting warmer, people are getting out more and if you’re looking for the perfect cocktail to celebrate with friends, or pair with a meal, this tequila based Paloma is beautifully citrusy to cut through rich flavours. 

Tequila is obviously the drink of choice in Mexico and when paired with Manuka Honey and citrus it just tastes like summer - there's no need to visit a cocktail bar for a delicious cocktail when you have this recipe - the benefits of Manuka Honey combined with smoky tequila and tart pink grapefruit. Sounds like the perfect cocktail recipe to us!

These cocktails are incredibly easy to make with just a cocktail shaker, and only 5 ingredients. And the best part is that your grapefruit juice and honey syrup can be stored in the fridge and popped together for impromptu guests.

HONEY TEQUILA COCKTAIL INGREDIENTS

Honey Syrup*:

Paloma:

  • Pink Himalayan Salt or Kosher salt (optional, for the rim)
  • 1 1/2 oz tequila (be sure to use 100% agave if you're GF!)
  • 1 1/2 oz grapefruit juice (preferable fresh!) This can easily be stored in the fridge for up to a week, and when made in advance has the added benefit of being nice and cold for when making cocktails
  • 1 1/2 oz unsweetened grapefruit, lime or plain carbonated water
  • 4 teaspoons of honey syrup (depending on how sweet you like it! - I used 4 tsp))

 

METHOD

Honey Syrup:

Add the ingredients to a small saucepan and heat on low over the stove until fully combined into syrup. This only takes a few minutes, and honey syrup is actually really handy to have in the fridge for sweetening drinks (and making cocktails) regularly!

Salt the rim (optional):

Wet the rim of your glass with grapefruit juice or water (juice works best), then dip in salt.

Paloma:

Fill your prepared glass with ice and set aside.

Add the tequila, grapefruit juice, honey syrup and ice to a cocktail shaker and shake about 10 seconds or until your shaker feels very cold. Strain into your glass (just using the built-in strainer in your shaker). Top off with your carbonated water, garnish with a slice of grapefruit and a sprig of thyme.
