450 g Fresh peaches, Stoned and sliced (4 peaches) plus 1 extra peach (optional)

1 lemon zest

1 tablespoon corn flour (cornstarch)

¼ teaspoon fine salt

400 g full fat yogurt, Greek or Natural yogurt

¼ cup honey
Instructions

Blend fruit. Add the peaches (keeping one sliced peach aside), lemon zest, cornflour, and salt into your blender and blitz until smooth.

Pour mixture into molds. I like to add the remaining sliced peaches into the molds. It's nice to bite down into some of the fresh peaches, plus it looks pretty. I also pour my mixture into a jug with a pouring spout to make this step easier. This is optional but it helps! Divide the peach mixture evenly between popsicle molds.
Add the popsicle sticks into the molds and freeze the popsicles for a minimum of 4 hours or until hard. Ideally overnight.
