Ingredients
Juice of 1 lemon
340g peaches
4 egg yolks
85g Mānuka honey
70g butter
How to make

Whisk ingredients: In a heatproof bowl, combine the blended peaches, lemon juice, egg yolks, and Mānuka honey. Whisk until smooth.
Cook gently: Place the bowl over a pot of simmering water (double boiler) and whisk continuously for about 15–20 minutes, or until the mixture thickens enough to coat the back of a spoon.
Add butter: Remove from heat and whisk in the butter, one cube at a time, until fully incorporated.
Cool and store: Pour the curd into a clean jar, let it cool, and store it in the fridge for up to a week.
