International pancake day is one of our favourite days of the year. Nothing beats the feeling of waking up to a stack of pancakes and having an excuse to eat as many as you like makes it just that little bit sweeter. In case you haven’t heard, international day of ANYTHING means you can indulge all day without feeling bad!!
The even more exciting thing about this recipe is that it is entirely refined sugar free. Made with a base of bananas and the inclusion of eggs and baking powder to make sure your pancakes are fresh and fluffy, this recipe is perfectly paired with our Squeezy MGO 40, 50 or 85+ Manuka Honey.
Add blueberries, apricots, strawberries or any other fresh fruit that takes your fancy and scatter a few pecans or hazelnuts over the top for a bit of texture, and while you’re at it, try coconut yoghurt or Kefir to break through the natural sweetness.

INGREDIENTS
2 ripe bananas
2 eggs
¼ teaspoon baking powder
1 tablespoon flour
A good pinch of salt
½ teaspoon cinnamon
2-3 teaspoons butter or coconut oil

Mash bananas in a bowl until there are no lumps, then whisk in eggs, baking powder, flour, salt and cinnamon until well combined.

Melt butter or coconut oil in a large non-stick fry pan on medium heat, then spoon large spoonfuls of mixture into the fry pan and cook for about 2 minutes on one side, then flip over and cook on the other side for about a minute, until golden. These are delicate beauties so you'll need to be a bit careful when flipping, and you'll need to cook in a few batches.

Take out of the pan and flip onto a plate, serve with a drizzle of Manuka Honey, with fresh fruit and crushed nuts for maximum deliciousness and nutrients.
