Valentines mini peanut butter & honey cups

INGREDIETNS

2 cups chopped dark chocolate

    1/3 cup peanut butter, natural unsweetened (*see note about powdered sugar)

      2 tbsp honey

        1/4 tsp cinnamon (optional)




        Line cupcake tin with cupcake liners. Or use mini silicone moulds. In a small bowl, mix peanut butter and honey until well combined. Set aside.

         



        In a microwave safe bowl, melt chopped dark chocolate in the microwave in 1 minute increments until melted. If you are melting over stove top, add 1 tsp of coconut oil.

        Add about 1 tsp of chocolate to the bottom of each cupcake liner, use the back of the spoon to make sure the bottom in coated with chocolate.

        Take about 1/2 tsp of the peanut butter mixture and shape it into a small disc shape (it doesn't have to be perfect). Place the peanut butter disc into cupcake liner and repeat.

        Add another 1 tsp or so of melted chocolate on top of each and smooth out with the back of a spoon if necessary. Place in the fridge for about an hour to set. But if you want to add sprinkles leave them in the fridge for about 1 min, then top with sprinkles and return for remaining time.

        This recipe will yield more peanut butter cups than can fit in a standard pan. Instead of waiting the full hour to resume, simply remove the cups from the pan after about 10 minutes and transfer to a plate or tray so you can continue making the remaining peanut butter cups.

        Decorate with your favourite toppings, freeze-dried berries, flaky sea salt or pistachio crumbles.
