Tiramisu Overnight Oats Recipe
Serves 2
Ingredients
For the oats layer:
- 1 cup organic whole rolled oats
- 1 cup milk (A2 milk, almond, oat or coconut work well)
- 1 tbsp chia seeds
- 1 tbsp Steens MGO 100+ Raw Mānuka Honey
- 1 tsp vanilla extract
- 1 tsp Maca powder
- 1 tbsp hemp seeds
For the cream layer:
- 1 cup plain coconut yoghurt or thick Greek yoghurt
- 1 tbsp Steens MGO 100+ Raw Mānuka Honey
- 1 tsp vanilla extract
For the espresso layer:
- ¼ cup brewed espresso or strong coffee, cooled
- Optional: a dash of Mānuka honey for a sweeter touch
To finish:
- A dusting of cacao powder
- Optional: dark chocolate shavings or cacao drops
Method
In a bowl, combine the oats, milk, chia seeds, Mānuka honey, vanilla extract, Maca powder and hemp seeds. Stir well and allow the mixture to sit for 10 minutes so it can begin to thicken.
In a separate bowl, mix together the yoghurt, Mānuka honey and vanilla until smooth and creamy.
Brew your espresso or strong coffee and allow it to cool completely.
Divide half of the oat mixture between two jars or glasses. Drizzle over a little espresso, then add a layer of the yoghurt mixture.
Repeat the layers with the remaining oats, espresso and yoghurt.
Finish with a generous dusting of cacao powder and, if desired, dark chocolate shavings or cacao drops.
Cover and refrigerate overnight, or for at least four hours, allowing the oats to soften and the flavours to develop.
