Summer Recipe Series: Blue Spirulina Ice Blocks with Raw Mānuka Honey

Ingredients

  • 2 medium frozen bananas
  • 25g frozen blueberries
  • 50g frozen strawberries
  • 125ml plain yogurt
  • 250ml milk of your choice (we used coconut milk)
  • 1 tablespoon Steens® UMF™ 13+ Raw Mānuka Honey
  • 2 teaspoons blue spirulina powder
  • 150ml plain yogurt (for layering)

Method

  • Add the frozen bananas, blueberries, strawberries, 125ml yogurt, milk, Mānuka Honey, and blue spirulina powder to a blender.
  • Blend until smooth and creamy.
  • Take your ice lolly moulds and begin layering with a small amount of the blue smoothie mixture.
  • Add a spoonful of plain yogurt.
  • Continue alternating layers of smoothie and yogurt until the moulds are full.
  • Insert a wooden stick into each mould.
  • Place the filled moulds into the freezer for approximately 4 hours, or until fully frozen.
  • Once frozen, remove the ice blocks from the silicone moulds and serve immediately.

Tips & Tricks

  • Try not to overmix the yogurt and smoothie while layering. Keeping the layers distinct will help maintain the vibrant blue colour, as too much mixing can create a greener shade.
  • For a creamier texture, use full-fat yogurt.
  • Add extra berries for a slightly sweeter, fruitier flavour.
  • Store in the freezer for a convenient summer snack whenever you need one.
