Ingredients

For our platter we used:

  • Blue cheese

  • Brie cheese

  • Steens® UMF™ 15+ Raw Mānuka Honey

  • Smoked salmon

  • Rock melon

  • Cashew nuts

  • Green olives

  • Strawberries

  • Kiwifruit

  • Cucumber

  • Salmon dip

  • Peach mocktails (to serve alongside)

Optional:

Method

  • Create a template from greaseproof paper measuring approximately 2.5cm x 2.5cm. This creates the perfect bite-sized squares for your platter.

  • Place the template over each ingredient and carefully cut matching squares where possible.

  • Once you've prepared plenty of pieces, begin assembling your platter.

  • We arranged six squares across our board to create a neat checkerboard effect, but you can adjust the layout to suit the size and shape of your serving platter.

  • Fill any gaps with olives, strawberries, cashew nuts, smoked salmon, fresh herbs or edible flowers for extra colour and texture.

  • Drizzle Mānuka Honey over the cheeses just before serving for a naturally sweet finishing touch.

  • Alternatively, toss your cashew nuts in a little Mānuka Honey and roast them beforehand for an irresistible crunchy addition.

  • Serve with salmon dip, peach mocktails and enjoy immediately.
