Summer Recipe Series: Refreshing Iced Drinks with Raw Mānuka Honey

Iced Blue Sky Latte
This beautiful blue latte gets its vibrant colour from butterfly pea flower tea. Light, refreshing and naturally sweetened with raw Mānuka honey, it's the perfect drink for warm afternoons.
Serves: 1
Ingredients

2 butterfly pea flower tea bags (or 2 teaspoons loose butterfly pea flowers)

100ml hot water
-
200ml milk of choice
-
1 tablespoon Steens® UMF™ 10+ Raw Mānuka Honey (Ritual Collection)

Ice cubes
Method

Brew the butterfly pea tea in the hot water for 5–7 minutes until deep blue.

Remove the tea bags and allow the tea to cool completely.

Fill a glass with ice.

Pour in the cooled butterfly pea tea.

Add the raw Mānuka honey and stir until dissolved.

Slowly pour the milk over the top to create beautiful layers.

Stir before drinking.
Iced Strawberry Cloud Latte
Serves: 1
Ingredients

3 tsp heavy cream
-
1 tbsp milk
-
1 tsp vanilla bean paste
-
1 tbsp strawberry powder
-
1 cup milk
-
1 double espresso, cooled
-
1 tbsp Steens® MGO 100+ Raw Mānuka Honey

Ice
Method

Brew a double espresso and allow it to cool slightly. Stir in the Mānuka honey until fully dissolved.

In a small bowl or glass, whisk together the heavy cream, 1 tablespoon of milk, vanilla bean paste, and strawberry powder using a mini whisk or milk frother until light and fluffy.

Fill a serving glass with ice and pour in the remaining cup of milk.

Slowly pour the cooled honey espresso over the milk.

Slowly pour the strawberry foam over the top.

Serve immediately and stir before drinking to enjoy all the delicious layers.
Tip: If you're adding the honey to very hot espresso, let it cool for a minute first. This helps preserve more of the naturally occurring enzymes found in raw Mānuka honey while still allowing it to dissolve easily.
Iced Peach Tea
Sweet, refreshing and packed with peach flavour, this homemade iced tea is perfect for summer entertaining or keeping in the fridge for sunny afternoons.

1 black tea bag

250ml hot water

1 ripe peach, sliced or tinned peaches
- 1 tablespoons Steens® UMF™ 10+ Raw Mānuka Honey (Ritual Collection)

Ice cubes

Fresh mint and extra peach slices to garnish (optional)
Method

Brew the tea bag in the hot water for around 5 minutes.

Remove the tea bag and allow the tea to cool slightly.

Add the peach into a separate bowl and mash until a puree consistency is formed.

Add mānuka honey into the peaches and stir until dissolved. Put the peach puree into a glass.

Fill a glass with ice.

Pour over the chilled peach tea.

Garnish with fresh mint and peach slices if desired.
