5 ingredient refined sugar-free chocolate bar
Mothers day for us is about celebrating all the time, effort and sacrifices that have been spent and made by our moms to get us to where we are. It’s about giving and showing thanks to the person who nurtured us as we grew, and is still there for us when we need a home cooked meal, a shoulder to cry on, or the very best listening ear.
This beautiful chocolate bar is perfect for dairy free, vegan, refined sugar free, and vegetarian moms, and anyone who loves a bar of chocolate.
One of the great things about this recipe is that you can tailor it to your mom’s favourite flavours. Try sprinkling with pistachios and cranberries, shredded coconut and dried cherries, dried rose petals and grated dried ginger, or orange peel and cinnamon.
The second great thing, is that you can use ultra high strength Manuka to get all the benefits of Methylglyoxal that Raw Manuka provides, as there is no cooking required so all the natural properties remain intact.

INGREDIENTS
1/2 cup organic cocoa powder, sifted
2 Tbsp almond butter (freshly ground from the grocery store is best, as it’s smooth but maintains some texture)
1 Tbsp melted coconut oil– if you’re looking for a coconutty flavour, Extra Virgin Coconut oil is best, but for a more subtle flavour, try Coconut cooking oil.
3 Tbsp Raw Honey – again, you can choose a stronger flavoured Monofloral variety for a richer, earthier taste, or a milder wildflower version for a more subtle raw flavour.

To a small mixing bowl add sifted cacao or cocoa powder, almond butter, melted coconut oil, raw honey, and salt. Gently stir with a spoon to combine into a thick paste.If your mix is too runny, add more cocoa powder. If too thick, thin with more honey or oil. You’re going for a fudge-like dough with some tackiness to it.

To form your chocolate dough into a bar, plop the mixture on one side of a piece of baking paper, fold the baking paper over and use a rolling pin to roll into a flat bar (~1/4 – 1/2 inch thick), then unfold the baking paper and use a spatula or similar tool to form into a square or rectangle.

Now you can decorate with mom’s favourite flavours! Once you’ve sprinkled the flavours on top, place the baking paper over the top, and press lightly so the sprinkles stick into the chocolate.

Wrap the bar in a piece of baking paper, or beeswax wrap and tie with string or ribbon with a cute little message and sprig of herb.These are best stored in the fridge so they don’t become too melty, so If you’re meeting mom out, try taking a cute chiller bag with her goodies, so that the chocolate remains firm.

Store leftovers covered in the refrigerator for up to 1-2 weeks, or in the freezer for 1 month or more (if they last that long).
You can also try rolling the mix into balls, and coating with cacao nibs and shredded coconut, or using a cookie cutter to create beautiful shapes and decorating.
